There are several high quality proteins and essential nutrients in fish that make this fish stew healthy. In my recipe I include fish specifically, fresh halibut. If you wish to use a different fish, I suggest using your favorite local fresh fish. Fish are considered to be an excellent low fat and high protein option. They include omega-3 fatty acids, vitamin D, and vitamin B2 (riboflavin). The omega-3 fatty acids are considered to be essential nutrients that keep our heart and brain healthy. So not only is fish delicious, but it also is considered to be healthy and can help provide our bodies with various proteins and nutrients. 

Besides the main ingredient being the fish, I also include different other healthy ingredients into the stew. These ingredients include tomatoes, potatoes, and celery. Tomatoes as we all know are healthy, they reduce the risk of heart disease and cancer. They also have vitamin C, potassium, folate, and vitamin K. Tomatoes are also great because they are low in calories! I also decided to include yukon gold potatoes in the ingredient list for the stew. Potatoes are known to be gluten-free. What you may not know about potatoes is that they also have no fat, sodium, or cholesterol. They also have at least half of your daily value of vitamin C. Not to mention, they also have more potassium than a banana! Crazy, right?! Celery is also another great and healthy ingredient that I have added to the stew. Celery reduces inflammation, supports digestion, and it is rich in vitamins and minerals. These are just a few of the benefits of eating tomatoes, potatoes, and celery.
