Comfort food is the best when it comes to making you feel better. Who said that comfort food needs to be unhealthy and high in calorie count? Some of my favorite comfort foods happen to be vegetarian! I want to share with you my top 3 favorite vegetarian comfort food recipes. These recipes are absolutely delicious and healthy. If you’re not vegetarian, you should definitely give these recipes a try, you won’t be able to taste the difference!
Truffle Mac & Cheese
This recipe is my special twist on the classic mac and cheese recipe that everyone has loved as kids! My Truffle Mac & Cheese is an absolute favorite not only for me, but amongst my dinner guests as well. Once I put my Truffle Mac & Cheese out on the dinner table, there are no leftovers left! Some ingredients that make this recipe so special includes baby bella mushrooms, black truffle butter, and the panko topping. I highly recommend you give this recipe a try, you won’t regret it!
Vegan Mushroom Lentil Bolognese
Are you a fan of lentils? Then this recipe is for you! This recipe is jam-packed with so many flavors, your tastebuds will thank you for it. Ingredients that make the flavor in this recipe pop includes the dry italian herb blend, dry red wine, fresh rosemary, and the red pepper flakes. Feeling blue? Then try this recipe out, this vegetarian dish is a definite mood booster!
Spaghetti Al Limone
Craving some spaghetti? Give in to your spaghetti cravings. My spaghetti recipe has a lemon-y twist to it. You guessed it, this recipe includes lemon. Lemon zest to be in fact! The lemon zest provides the dish with flavors that will have you craving more. If you decide to try out this recipe, I recommend garnishing it with black pepper and julienne lemon slices.
