Bacon Wrapped Cheese Stuffed Chicken Breast - Wine Dine With Jeff

INGREDIENTS

  • 1 1/2 Pounds of Chicken Breast Boneless skinless (2 chicken breasts)
  • 6 Slices of thick cut bacon
  • MARINADE INGREDIENTS
  • 3 Tablespoons of olive oil
  • 3 Tablespoons of Balsamic Vinegar
  • 1 Tablespoon of minced garlic
  • 1 Teaspoon of Italian blend herbs or a combination of dried basil and dried oregano
  • 1 Teaspoon of Salt and 1/2 teaspoon of cracked pepper
  • CHEESE STUFFING INGREDIENTS
  • 2 Tablespoons of Sun dried tomatoes in olive oil with Italian herbs minced up
  • 2 Tablespoons of fresh basil sliced
  • 3 oz Mozzarella cheese balls in brine liquid (I used the small ones) 5 for each chicken breast

Directions

  • 1. Okay people, No joke, this is the best way to do baked boneless skinless chicken breast. When you wrap Bacon around a chicken breast it creates this amazing juicy and smoky flavor explosion. Then we go and stuff it with creamy mozzarella and sweet sun dried tomatoes for a sweet and juicy burst in every bite. Start with cutting a pocket inside the chicken breast without butterflying the chicken breast completely open. Place your palm of your hand on the top of the chicken breast with your pairing knife cut into the top of the chicken breast to cut a 2 inch wide pocket and about 4 inches deep into the breast. After you remove the knife use your fingers and separate the pocket where you will stuff the cheese filling.
  • 2. In a bowl that holds the marinade and chicken, add all the ingredients olive oil, balsamic vinegar, garlic, Italian herb blend, Salt and Pepper. Make sure all sides of the chicken is coated in the marinade. Place the chicken in the fridge and let the chicken marinate for a minimum of 2 hours. I like to marinate the chicken for 6 to 8 hours because the balsamic vinegar helps break down the chicken tissue and keeps the chicken moist and tender.
  • 3. Mix together the easy and delicious cheesy filling. In a small bowl add the sun dried tomatoes. Use the sun dried tomatoes that are packed in olive oil with Italian herb seasoning. If the sun dried tomatoes are whole cut them into small bite size pieces . Add a Tablespoon of the olive oil from the sun dried tomato jar because it is filled with delicious Italian herbs and flavors. Slice the fresh basil and add it to the sun dried tomatoes and oil. Mix in the mozzarella balls, I use 5 small mozzarella balls for each chicken breast depending of the size of the chicken breast and pocket you cut. Don't add the brine liquid the mozzarella is resting in. Mix all the ingredients together.
  • 4. After the chicken has finished marinating shake off any excess marinade. Stuff the sun dried tomatoes and cheese filling inside the small pocket you created at the top of the chicken breast. You will need to get in there with your fingers to stuff as much as you can in the pocket. The more filling you stuff inside the pocket the juicier the chicken breast will be. This is the fun part get in there.
  • 5. After Each chicken breast is stuffed it's time to wrap the chicken with bacon. Lay 3 strips of thick cut bacon on the counter and lay the chicken breast on top. Starting at the small bottom part of the chicken wrap each end over the chicken and tuck in on the other side. Do this with each slice of bacon until all you see is bacon and no chicken. Place the wrapped chicken on a wire rimmed baking sheet. I like a wire rimmed baking sheet because it allows the air to circulate and all side of the chicken get nice and crispy. No one like soggy bacon RIGHT!. The oven should have been pre heated to 425 Degrees Fahrenheit . Place in the oven.
  • 6. Bake the stuffed bacon wrapped chicken for about 25 minutes depending of the size of the chicken breast. My chicken took 25 minutes and it came out juicy and tender in the middle with crispy bacon on top. Make sure that your chicken temperature is 165 Degree Fahrenheit before eating. Don't forget that the chicken is stuffed that you are not taking the temperature of the filling and not the meat. I like to enjoy this amazing juicy chicken with a light salad or vegetable.
