Low Carb Chicken Casserole - Wine Dine With Jeff

INGREDIENTS

  • 16 Oz riced cauliflower
  • 1 cup of heavy cream
  • 2 eggs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 1/2 teaspoon of Italian spices
  • 1/3 cup of fresh basil
  • 3 scallions both white and green parts
  • 3 CUPS of roasted chicken
  • 1/2 cup of grated parmesan cheese
  • 14 Oz of broccoli Florets
  • Salt and Pepper to Taste
  • 10 Oz of fresh Mozzarella cheese fresh non grated kind

Directions

  • 1. 9x13 glass baking pan mix your eggs and heavy whipping cream together with your dried herbs garlic powder, onion powder and italian spice blend.
  • 2. MIx your rice cauliflower, roasted chicken, scallions, broccoli florets, fresh basil and parmesan to the wet ingredients and add salt and pepper.
  • 3. Top with fresh mozzarella cheese cover with foil and place in pre-heated oven at temperature of 350 degrees for 45 to 50 minutes depending if you want your vegetables more in the crunchy side or softer side.
