Sheet Pan Salmon Fajitas - Wine Dine With Jeff

INGREDIENTS

  • 1 LB of Salmon
  • 3 Bell Peppers (I used red, green and yellow) sliced
  • 1 Large Yellow onion sliced
  • 1 Jalapeno sliced seeds removed
  • 1 Tablespoon of olive oil
  • FAJITA SPICE BLEND
  • 1 Tablespoon Chili powder
  • 2 Teaspoons of Cumin
  • 1 Teaspoon of Paprika
  • 1 Tablespoon of brown sugar
  • 1/2 teaspoon of oregano
  • SALMON MARINADE
  • 1 Tablespoon of Soy Sauce
  • 1 Tablespoon of Olive oil
  • 1 Lime juice of whole lime about 2 Tablespoons
  • 1 Teaspoon of Dijon mustard
  • Optional Ingredients Cilantro, Corn or flour tortillas, avocado, sour cream, black beans and refried beans

Directions

  • 1. Sheet Pan Salmon Fajitas are so incredibly easy and packed with so much flavor! Tender and moist salmon with onions and peppers are all made on one sheet pan for easy cleanup! Can you say Taco Tuesday Or, better yet, Fajita Friday!!! Sheet pan dinners actually save you time and energy. We can all use a little extra time and energy during our busy weeks. These salmon fajitas are just packed with flavor, you will love them so much these fajitas will be requested on a weekly basis, guaranteed! I like to start with a whole salmon fillet and cut it into smaller fillets. The reason for this is that all the fillets will be of the same thickness and they will all cook at the same time. I cut 3 fillets out of 1 pound of salmon.
  • 2. Next blend together the fajita spices, chili powder, cumin, sweet paprika, oregano and brown sugar. I do not add salt in this spice blend because I like to salt the peppers and onions directly in the sheet pan. Also after you make this ounce you can experiment with this spice blend by adding different spices like chipotle powder and cayenne powder for a little heat in the spice blend.
  • 3. Slice up all the onions and peppers. I make rustic cuts with the bell peppers since they are sweet and delicious. I tip on cutting bell peppers always cut the pepper waxy side down, the knife slices through the pepper much easier. You want to cut the jalapeno in half remove the seeds and slice the jalapeno a little on the thinner side of slices because of the heat. If you do not like spice you can omit the jalapeno or if you like extra spice you can always add 2 jalapenos or a spicier serrano pepper.
  • 4. I used my favorite 17 by 12 sheet pan for this recipe it is aluminized steel with a non stick surface. Add all the peppers and onions to the sheet pan. Drizzle with 1 tablespoon of olive oil and sprinkle half of the spice blend mixture overtop of the onions and peppers. With you hands dive in and toss the onions and peppers in the olive oil and spice mix directly on the sheet pan. Place the sheet pan in a pre heated 425 Degree Fahrenheit oven for 20 to 25 minutes pulling out half way through to toss and place directly back into the oven. It is important that we did not add the salmon at this time because the salmon would be dry and overcooked before the onions and peppers finish caramelizing. .
  • 5. After you place the onions and peppers into the oven it is time to mix together the easy salmon marinade to boost the flavor of the salmon filets Mix together the Soy sauce or tamari, lime juice, olive oil, and Dijon mustard. Add the salmon filets to the marinade and coat all side of the fish, let sit for no longer than 15 minutes in the marinade. You don't want to salmon sitting in the marinade any longer than 15 minutes because the acid from the lime juice will turn your raw salmon into ceviche. That just means the salmon was cooked from the acid in the lime juice. .
  • 6. Pull the onions and peppers out of the oven. Remove the salmon from the marinade place directly onto the HOT sheet pan, you will need to make room and push the onion and peppers back. Sprinkle the other half of the fajita spice blend directly onto the salmon on all sides. I do not salt the salmon since it was sitting in the soy sauce marinade but if you like extra salt this is time to do it. Place the hot sheet pan directly into the 425 degree Fahrenheit oven. This is the most important part for baking the best moist salmon fillets, immediately after closing the oven door reduce the temperature down to 275 degrees Fahrenheit and cook for 11 minutes. Remove and check the temperature of the fish it should be 125 degrees for the perfect moist and delicious salmon.
  • 7. You can enjoy your salmon fajitas in various ways. You can make soft tacos with corn or flour tortillas, plus you can top with cilantro, avocado and sour cream for extra richness. For sides enjoy them with black beans or refried beans what ever is your family favorite. I hope you enjoy them as much as I do.
