INGREDIENTS

  • 1 pound pork tenderloin (not loin)
  • 2 tablespoons of olive oil
  • INGREDIENTS FOR SPICE RUB (enough for 2 or 3 tenderloins)
  • 1 tablespoon of paprika
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of dry oregano
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of chipole chili powder
  • 1/2 teaspoon of dry mustard
  • 1/2 teaspoon of ground black pepper
  • Salt to taste

Directions

  • 1. Remove all silverskin from the pork tenderloin.
  • 2. Combine all dry rub spices together in a bowl, coat the pork tenderloin with the dry rub and then add salt.
  • 3. In an ovensafe skillet on medium high heat, add olive oil to pan and brown all sides of pork tenderloin should take 2 minutes per side.
  • 4. Place same skillet with browned pork tenderloin in a 400 degree preheated oven for 10 minutes until internal temperature reads 145 degrees. The pork should come out juicy and slightly pink in the middle.
