INGREDIENTS FOR SPICE RUB (enough for 2 or 3 tenderloins)
1 tablespoon of paprika
1 teaspoon of smoked paprika
1 teaspoon of cumin
1 teaspoon of dry oregano
1/2 teaspoon of garlic powder
1/2 teaspoon of chipole chili powder
1/2 teaspoon of dry mustard
1/2 teaspoon of ground black pepper
Salt to taste
1. Remove all silverskin from the pork tenderloin.
2. Combine all dry rub spices together in a bowl, coat the pork tenderloin with the dry rub and then add salt.
3. In an ovensafe skillet on medium high heat, add olive oil to pan and brown all sides of pork tenderloin should take 2 minutes per side.
4. Place same skillet with browned pork tenderloin in a 400 degree preheated oven for 10 minutes until internal temperature reads 145 degrees. The pork should come out juicy and slightly pink in the middle.
